At last I've finished my cookbook ( just need the cover photo and then it's off for publishing. ) It's been rough, and since certain family members keep hogging the desktop computer, I haven't been able to blog ( sorry, it's impossible to blog on my tablet.) or update the cookbook as I would have liked. At last today I was able to get everything put in and now I'm here to blog.
So I'm sure most people who sift through internet recipes have come across recipes for vegan chia pudding and such. Right? If not, now you have. I'll admit, it may not be for everyone. The texture is odd, but if your vegan, or up for new things, you might enjoy this.
It's pretty... ish . The berries are the pretty part. Anyway, it's sweet, and filling, not to mention all the omgea-3 heart health in the chia seeds! The recipe is down below.
Simple Chia Pudding
* 1/2 Cup Cocoanut Milk
* 2 Tbsp Organic Sugar or Maple Syrup
* 2 Tbsp Chia Seeds
* Various Fruit
Directions :
Combine the milk, chia seeds, and sugar together in a bowl. Cover and refrigerate over night. Add fruit and honey if desired.
