I'm so ready for spring, I've been sick twice in 3 weeks, and then we had a massive winter storm. It's sucked. Anyway, due to this massive snow storm, I came up with a fun idea to make snow cream chocolate chip cookie sandwiches! No better way to avoid all the chemicals found in store bought ice cream than to make a sweet substitute.
Cute right? It's amazing, the snow cream is light and sweet, and the cookie..well who doesn't love a homemade chocolate chip cookie? I hope to have more posts to come. Other than being sick, snowed in, and just plain tired...I've been making lots of tincture and planning my herb garden for this spring. It takes a lot of time. Anyway, lets get down to business with this yummy snow day dessert.
Snow Cream Chocolate Chip Cookie Sandwiches
For the cookies :
* 1 cup Butter , Softened
* 3/4 cup granulated sugar
* 3/4 cup light brown sugar
* 1 teaspoon vanilla extract
* 2 Eggs
* 2 1/4 cups all-purpose flour
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 2 cups semi-sweet chocolate chips
For the Snow Cream
* 8 Cups fresh clean snow
* 1 tsp vanilla extract
* 1-1/2 cups milk
* 1/2 cup sugar
* pinch of salt
Directions :
For the Cookies :
Heat oven to 375. Beat Butter, granulated sugar, brown sugar, and vanilla in a large bowl until creamy. Add the eggs, beat well. Stir together flour, baking soda and salt. Gradually add the flour mixture to the butter mixture, beating well. Stir in chocolate chips. Chill dough first, or go ahead and drop the dough onto an ungreased cookie sheet and bake for 8-10 minutes or until lightly browned, then allow them to completely cool.
For the Snow Cream :
Mix all ingredients together until well combined , store the snow cream in a plastic container in the freezer until ready to use.
For Sandwiches :
Once the snow cream is well frozen, and the cookies are totally cooled, take similar sized cookies and place snow cream on one, top with another, freeze the sandwich for 30 minutes ( or else it gets drippy really quick)
