Garlic Soba Noodles and Flax Seed Meal Crusted Chicken.

I came up with this little dish when my Dad began having blood sugar issues. It turned out to be amazing, and even he ( picky about healthy food) loved it!




Garlic Soba Noodles & Flax Seed Meal Crusted Chicken Recipe

8oz dried Soba Noodles
1/4cup Parmesan Cheese
1/2 cup Flax Seed Meal
1 pound boneless Chicken Breast
2 Eggs beaten 
2-4 Green Onions Chopped
3 cups Baby Spinach
1/2 teaspoon garlic powder   


Pour olive oil ( or grape seed oil) into a frying pan ( just enough to cover the bottom)
Add half the Parmesan cheese and Flax Meal to a large bowl, add 1/4 of the garlic powder to the mix. 
Dip Chicken Pieces in the bowl containing the beaten eggs, then coat chicken in Flax Mixture, add to frying pan and fry till done, remove from pan ( Clean the Pan or use another if you like) 
Next Prepare Soba Noodles as directed on the package. 
Add olive oil ( or grape seed oil) to cleaned fry pan, saute' onions then add in baby spinach, saute' till baby spinach is wilted, add the rest of the garlic powder and noodles. Stir till mixture is warmed and coated in oil, then serve with sliced chicken breast on top.

Finally

Finally. After three days of non stop stressing over site designs, account settings, pictures, and prices, it's done. I've struggled with this site: happyholisticlivin.wix.com/happyholisticliving, trying to build it all in one night. All the stress contributed to, two very LARGE cups of green tea, two salads, insane cravings for tuna, chocolate and even those old chow mien noodles sitting in a bag in my cabinet. There was also a terrible, terrible headache. I'm still not sure why I had those cravings..but they were there as was that super headache. It was most likely stress. Which is why I'm writing this now.

 Stress makes us crazy, it causes us to almost loose our minds not to mention it's harmful to our bodies. It can cause out blood pressure to soar, our waist lines to expand, wrinkles to creep up out of no where. Leading to the big question...How do you cope with insane stress? 

Well I know a few things..I'm sure you've heard them all before.  Exercise, Do things you love, Eat right...it's all true, but how many of us think of these things when we have deadlines to meet, bills to pay, kids screaming all day ( or for me the cat). The best thing to do is stop, calm down, think "Rome wasn't built in a day" or " Everything will be fine" It can actually help alot. At the End of the day, sit, read a book, take a long bath, go for a nice walk, or play with the kids ( or pets). It really helps. 

P.S.  Not entirely sure why I posted the picture..I just thought it looked pretty and peaceful.
